Farmer’s Market Salad

Oh yeah, summer is just around the corner and with spring’s fruits, or veggies should we say, there are some amazing salads waiting to be tossed together. This recipe focuses on fresh vegetables so feel free to substitute with your favorite seasonal veggies. Add grilled chicken, seafood or beef to make it the main course at dinner and save your calories for a refreshing cocktail or luscious glass of wine!

Ingredients:
6 oz Mixed Greens
2 oz Fresh Mozzarella, broken into 1” pieces
½ oz Red Onion
1 oz Snap Peas
1 oz Green Beans, cooked and chilled
1 oz Yellow Bell Peppers
10 Grape Tomatoes
1 ½ oz Cucumber, peeled & seeded, diced into 1” pieces
3 oz Roasted Garlic Vinaigrette

Roasted Garlic Vinaigrette:
1 Tbsp Roasted Garlic
3 oz Olive Oil
1 Tbsp Honey
1 oz Apple Cider Vinegar
½ Tbsp Dijon Mustard
½ Tbsp Lemon Juice
