Fresh Heirloom Tomato & Mozzarella Salad

Celebrate your Father’s Day weekend and grill out with Dad! Start off your meal with this light and fresh tomato and mozzarella salad—perfect for hot days on the patio with friends and family.

4 oz Fresh Mozzarella Ovaline (12 ea)
3 oz Heirloom Cherry Tomatoes, halved
1 oz Red Onion, thinly sliced
3 each Pepperoncini, sliced lengthwise
1 Tbsp Basil, roughly chopped
1 Tbsp Parsley, roughly chopped
1 oz Extra Virgin Olive Oil
1 tsp Salt
8 each, Crostini, Freshly Toasted
1 tsp Fresh, Roughly Ground Black Pepper

1. Place all items in a small mixing bowl.
2. LIGHTLY, fold all items together until fully incorporated. (Be careful not to break the tomatoes or mozzarella)
3. Garnish with Fresh Ground Black Pepper
4. Serve with toasted baguette

    Hubby is going to open gifts (a calendar of our baby girls) it’s his first Father’s Day and he’s so in love with them. Then we’re going to go shopping for clothes for my husband and our new baby girls. It’s also our 1st wedding anniversary so we might wind up going to Maggiano’s for dinner. We got married there last year!

    My father and I are taking our father daughter horseback ride together. This is the time that we spend talking about what we have been doing and what we would like to do with our future plans. Then I usually take him to lunch and he tells me that I am much better as an adult then as a teenager! :)

    My father lives in another state, but I’ll be enjoying celebrating my husband as a father!  No specific plans, although will go out to eat after church on Father’s Day.  Would love to come to Maggianos! :)

    My husband doesnt know that I requested off work on Sunday! He normally works 8-4 & I work 5-1am as a server… we only have Sunday mornings together.. he thinks its just church as usual then I have to head to work but I plan on being home with him and our young daughters who are 17 months and 7 months… with hectic work hours, we need some time together!

    Our son’s bday is on Sunday, so we are going to the beach to celebrate.  His dad doesn’t mind sharing Father’s Day with his son’s bday, especially if he gets to go to the beach, too. :)

    My dad lives a few states away but they were able to visit my wife and me last week so we took them to Maggiano’s for their first time. Had a great evening and actually got a couple of free desserts because my parents and my wife and I have out 30th and 1st anniversary in the next couple of weeks!

    Salad looks delicious–I’ll try it! What I’d really like is recipe for the incredible roasted potatoes that accompanied my salmon at the Orlando restaurant. I generally sprinkle potatoes with herbs and olive oil and bake at 400–but these were so crispy….

    We are the older generation, so Dad and son will be working on finishing a small wooden boat that our son started building when he was a senior in high school in Maine in 2002.  They are planning to have it ready for the water very soon, so they can go out on the lake in their own hand built boat.  We have recently moved here from Maine and are thrilled to be living near our son.

    We are hoping our daughter will bring takeout Maggiano’s to our home west of Fort Worth.  Since its supposed to be 102 I think we will dine in our bathing suits
