Thanksgiving is tomorrow and filled with a day full of cooking! Make things easy tonight and prepare our Tuscan Style Mussels. Serve with toasted baguette and a salad for a simple and delicious meal! These mussels would also taste great on top of a bed of pasta. I hope everyone has a wonderful Thanksgiving with family and friends!
20 EA Mussels, cleaned and removed of beards
2 T Cannelini Beans
1/2 T Fresh Chopped Parsley
1/2 C White Wine
1/2 T Fresh Chopped Basil
1/2 T Chopped Garlic
2 T Butter
6 OZ Chicken Broth
1½ T Sun-dried Tomatoes
Juice, freshly squeezed, from ½ lemon, no seeds
1. In a sauté pan, heat the mussels, wine and garlic. Cover pan and cook over high heat until mussels open.
2. Add remaining ingredients to pan and bring to a simmer briefly
3. Remove from heat. Place in a small bowl with open shells facing upwards.
Neatly garnish with two pieces of garlic toast.
