Our New World Italian features offer a broader selection of entrées. Jeff Mann, Senior Manager of Culinary, describes the flavors and new options for Guests available Thursday, Feb. 28 through Wednesday, April 24.
Four great entrées are featured in New World Italian that are a little back-to-basics in approach, but tie-in sophistication and upgrades that create Memorable experiences. We traveled to Southern Italy in flavor and took an approach with fresh cues from the Mediterranean region.
Beginning with Chicken Caprese, I took our existing menu item from the Dining room and Banquets, and made it more contemporary with grilled focaccia. In place of orzo, I added grilled asparagus and topped everything off with fresh Mozzarella. At lunch this dish is offered with one piece of chicken to carry out the lighter side behind the inspiration of the whole menu.
Thinking about the coast, lighter seafood options come to mind, and Guests can choose from the Grilled Shrimp Lemonette or the Grilled Salmon Capri. The Grilled Shrimp offers vibrant colors and packs great flavor with radishes and snap peas. I added a new flavor with the Grilled Salmon by incorporating tangy yogurt sauce with tomatoes, cucumbers, red onions and fresh herbs. Kalamata olives add a finishing touch on this Mediterranean-inspired fare.
With the success of the Grilled Sirloin during our Seasonal Features, I continued using this great cut of meat that’s priced for all Guests to enjoy. The Tuscan Herb Sirloin Medallions feature mushrooms in a bigger way than usual and the herb and sun-dried vinaigrette brings the dish together to make it a little lighter than other steak options on our menu.
Finally, the Chocolate Marshmallow Torte is a fun and playful dessert option for the kids at heart. It’s an upgraded s’more reminiscent of days around a campfire, minus the work and sticky mess. Encourage your Guests to treat themselves with this delicious graham cracker crust, Belgian-chocolate ganache and homemade marshmallow topping!

Tuscan Herb Sirloin Medallions
Grilled Medallions of Sirloin and Mushrooms topped with a Sun-Dried Tomato Vinaigrette served with Smoked Mozzarella Garlic Mashed Potatoes and Grilled Asparagus
