Contadina Style Frittata
Contadina is one of our preparations that can be added to any Veal Porterhouse or steak dish. This includes Italian Sausage links, Crispy Red Potatoes, Roasted Red & Yellow Peppers, Roasted Mushrooms, Caramelized Onions, Sun-Dried Tomatoes, Steak Jus, and Garlic Butter. This recipe can also work with you leftover Sausage & Peppers appetizer.
Make sure you’ve sliced the meat into bite-sized chunks. In a large, greased skillet, combine 6-8 beaten eggs with your leftover steak and Contadina ingredients. Then cover and cook on medium heat for approximately 20 minutes or until the center is firm. Add your favorite cheese (we suggest Ricotta or Parmesan), slice and serve. We added parsley as a garnish to ours, but imagine what you could do with our Fresh Grilled Asparagus and this dish!
Chicken, Veal or Eggplant Parmesan Sandwich
Follow our reheating instructions with any one of our Parmesan dishes to make this yummy sandwich. Add a fresh layer of Provolone cheese on sliced focaccia, and toast to melt the cheese. Ask your server for a jar of one of our Sauces to purchase, and add make sure you have plenty of Marinara for dipping!
Caprese Pasta Sauce
The tomatoes, fresh mozzarella, basil and balsamic glaze from our Tomato Caprese appetizer can be diced and cooked into a comforting sauce that can be served hot or cold. Just add olive oil, minced garlic, balsamic vinegar, basil and salt and pepper to taste. Try this with your favorite pasta, crostini, or take-home Four-Cheese Ravioli and you’ll be glad you did!
Chocolate Zuccotto Cake Balls
Transform last night’s Chocolate Zuccotto Cake into bite-sized cake balls to share today.
In a large mixing bowl, mix the cake with with ¼ cup milk or less. You just want to moisten the cake enough to be able to roll into 1 inch balls. Melt chocolate morsels in a microwave or double-boiler. Check and stir often. Dip each ball into melted chocolate, and set on a cookie sheet lined with parchment paper to cool.
