Little Italy Favorites Stuffed Pastas Burrata Ravioli

Every dish has a story, and over the next few weeks, we will share the stories behind these unique, Italian dishes. You can’t visit Italy without appreciating the simplicity of letting great ingredients shine. This is what our chefs were most impressed by during their visit to Florence, Tuscany, Parma and Venice last fall. They may be difficult to pronounce, but they are definitely easy to enjoy because it’s what’s on the inside that counts.

Let’s start with our new Burrata Ravioli. Burrata has been called “the earth’s best cheese.”  Burrata is essentially fresh mozzarella stuffed with the leftover curd from making fresh mozzarella, then topped with fresh cream. Burrata is often served as an appetizer, but our chefs found its creamy, rich texture to pair perfectly with tender fresh pasta. We let it shine with charred tomatoes, fresh basil, a little garlic, a drizzle of balsamic, some fresh cracked pepper and a parmesan broth.
