This is Brian’s second time with Maggiano’s.  He started as the banquet Chef in Buckhead when it opened and worked there for over three years then moved on to another restaurant for nearly 7 years.  Brian returned to Maggiano’s at Cumberland Mall and was recently promoted to Executive Chef here in Durham. He attended Johnson and Wales University in Providence, Rhode Island and majored in Culinary Arts. Brian’s inspiration for new dishes comes from just going to the store and finding what is the freshest and most interesting items available. He really loves working with seafood the most. Brian also enjoys using a charcoal grill to cook with because nothing gives food a better flavor, and it can be used in so many ways on all types of food.
